Grilled walleye with Almonds

Ingredients:

3/4 lbs of Walleye (filleted and skinned)
1 tablespoon of butter (softened)
4 thin red onion slices
2 tablespoons sliced almonds
1/4 cup sliced green onions
1/8 teaspoon salt
1/8 teaspoon lemon pepper paprika (can use white)
4 thin lemon slices
 
 
 
 

Recipe Description:

Prepare the grill for medium high direct heat. Grease the center of 20" x 18" of heavy duty aluminum foil with butter. Arrage 2 slices of the onion and lemon over the butter. Sprinkle with 1/2 of the almonds and green onions. Arrange the fillets in a single layer over the mixture. Top with the remaining green onions and lemon and almonds. Sprinkle lightly with the salt and paprika.

Fold the long sides of the foil together in lock folds. Fold and crimp the short ends. seal tightly. (form a cooking pan). Place the packet on the center onf the grill. Grill covered for 11 minutes or until the fish is firm and opaque and just beginning to flake.

Serve with boiled redskin potatoes and parsley.
