grilled catfish (with leeks and peppers)

Ingredients:

2 leeks
1 medium red pepper sliced thin
1 poblano pepper sliced thin
3 tablespoons fresh cilantro leaves chopped
2 cloves of garlic thinly sliced
2 small limes thinly sliced
2 whole catfish heads and skin removed
2 teaspoons cajun seasoning
 
 
 
 

Recipe Description:

Have the grill ready, medium high direct heat.. Remove 4 large outer leaves from the leaks. Cut the leeks in 1/2 lengthwise rinse and and chop until you have 1 cup. Mix the chopped leeks, pepper slices,cilantro and garlic. (in a small mixing bowl)

Spray a 20 inch fish grilling basket with nonstick vegetable cooking spray. On one side of the basket, layer 1/2 of the full leak leaves, half of the limes and half of the pepper mixture. Sprinle both sides of the catfish with cajun seasoning. arrange the fish in the basket. top with the remaining pepper mix and lime slices. cover with the remaining leak leaves and secure in the basket.

Place basket on the cooking grate. Grill covered for 15 minutes. turn the basket over and grill (covered) 15 minutes longer or until the fish begins to flake when you insert a fork at the backbone in the thichest part of the fish. serve hot, with a fresh corn and tomatoes.
