4- 6oz Salmon fillets
1 tsp salt, ground mustard,dried thyme(crushed)
1/2 tsp fresh ground pepper
3 tsp. honey
3 tsp. olive oil
2 quatrs fresh spinach
1/2 tsp. garlic, minced
2 cups seedless grapes
1/2 cup dry red wine

Combine salt, mustard, thyme, and pepper. Rub the Salmon with honey. Sprinkle the mixture over the salomon, reserving about half. Heat 2 tsp. olive oil in a non-stick skillet and brown both sides of the salmon. Toss spinach garlic and remaining oil in a 13x9x2" pan. Place salmon on spinach and cover loosely with foil. Bake @300 for 10 minutes. Saute halved grapes in the skillet used to brown salmon. Add wine bring to boil and season with reserved seasoning mix. Cook gently to reduce by 1/2. serve salmon atop the spinach. Pour over grape sauce. Salt to taste.
