Small mouth bass with warm Peach salsa

Ingredients:

4 -6oz bass fillets
2 tlbs thawed frozen orange juice concentrate
3 cups bite sized pieces of fresh peaches
1/2 cup chopped red bell pepper
1 jalapeno pepper finely chopped
1 hungarian hot wax pepper finely chopped
1 mild banana pepper chopped
1 tablespoon chopped fresh cilantro
 
 
 
 

Recipe Description:

Preheat grill to medium. Spray grill rack with nonstick cooking spray. Brush the fillets with the orange juice concentrate and sprinkle with pepper. Fold a 36x18" piece of heavy foil in 1/2 crosswise. Place peaches, peppers in center and toss with remaining juice concentrate. Bring up the edges and seal.

Place the peach packet on the grill and cook for 10 minutes (you want the peaches hot). Grill the fish along side the foil packet,(5 minutes per 1/2" thichness), turning once or until fish flakes with a fork.

Open the foil packet and sprinkle with cilantro. Serve with the fish right off the grill. (If you want a milder salsa remove the Hungarian wax pepper from the salsa mix.)
